P to V - ESX 5.1 - Windows Server 2003 + SQL Server

Good Morning:

I am having a bear of a time P to V a Windows Server 2003 that has SQL Server 2005 running with multiple instances. The bottom line, I have a ESX 5.1 environment and attempting to bring in a physical machine via VMWare vCenter Converter Standalone. The server comes up fine after some manual CMD line slashing, but SQL just never gets going. I am snapping the server "hot" and have tried a few different variations. Ie: The first snap, I did not stop any services and just had at it, many SQL issues, office issues etc, was not fun. The next night, I snapped it hot again with all SQL services stopped, brought it up and SQL would not start, "your SQL server installation is either corrupt or has been tampered with" and could not clear this error. I am going to try it again tonight, as this is a production machine (has to be done off hours). I read to snap it "cold" but quickly found out VMWare does not quite support this in 5.1.

Should I be stopping more services, or take a different approach? Any insight that anyone can provide would be greatly appreciated!
