Help needed: 2 virtual displays required in guest.

Hi all.

I am trying to use VMware Workstation 9 to run a virtual instance of an existing, already configured restoration image for a computing appliance that runs a Windows 7 Embedded (64-bit) operating system.  This 'appliance' system requires either 2 or 3 displays to be connected in order to operate.  This is where my problems begin; I have configured VMware Workstation to provide 2 virtual displays to the guest, but it is only providing one virtual display, which prevents operation of this appliance system software.

Now everything I have read via varous internet and help document searches suggests to install VMware tools software on the guest (virtual) machine, but this is something I can not do becuase I can not get to the Windows Desktop or install any software on this locked-down computing appliance running a Windows 7 Embedded (64-bit) operating system.

So, can anybody help me convince VMware Workstation to provide 2 virtual displays to the guest operating system, without requiring any software (other than Windows) to be installed on the Guest OS?

Thank you.

Additional information:

The Host computer is running Windows 8 (64-bit), and has a single physical video card and monitor connected.
