Server migration re-using existing VMWare Disk Images for Data Drive??

Hello, I hope this is the right subforum, I am pretty new to VMware so I apologize if my question seems silly or straight forward.

 

I am in the process of migrating a 2008 SBS -> 2011 SBS.  Both machines are separate VM's on the same host.  Instead of creating a second datastore and manually robocopying the data, if I were to complete the migration/demotion of the old server, could I attach its entire VM (C and D) as a disk of the new server, and simply remove the C partition leaving the D partition to be readily used as Data?  The D partition is literally just raw data... images/files/user home directories.  Both partitions are on the same VD/VM, it seems in my mind like it would work, but I wanted to check here that I wasn't insane.
